Depression cheese also turns up Velveeta-- nothing melts better! -- but sidling up to a processed cheese spread doesn't warm my heart. Probably because I didn't grow up with it.
I found one blog that touts the mood stabilizing impact of cheese or cheese eating. Anecdotal evidence for cheddar-- but that didn't ring true for me.
Now comes Wilde Weidekass. Again, a chance taste at Formaggio Kitchen. The cheese monger cheese planed a cheese curl into my hand, and as soon as my mouth closed I could tell this was it. The texture of a perfect persimmon, the gentle flavors of carmel, flowers, and clove. You have to pay attention though. At home, this cheese wants you to calm down, sit down, and dream a little. Let me know what you think if you happen to come across this subtle beauty.
An aside-- I wish that I had seen this post from President Obama's office before January 21. I might have asked if his administration plans on pushing hard on universal high-quality early childhood education. Or, I could have encouraged the press secretary to enjoy some Wilde Weidekass.
